Product Description

We created the first OXO mandolin slicer in 2004, and we've been perfecting the art of slicing and dicing fruits and vegetables ever since. The OXO chef's mandolin slicer 2.0 combines the best features from our original mandolin slicer, with some updates to make it even easier to use, like an angled blade and a top-view indicator window to make switching between blade settings quick and seamless. Create up to 21 different cuts with thickness settings in 0.5-Mm intervals, straight and wavy blades, and built-in julienne and French fry blades. Prep like a chef without needing professional knife skills - or a knife at all.

I just got this today, and I've been busy slicing a bunch of leftover potatoes on every setting to test it out. It slices beautifully, and the holder works very, very well for round slices. I did not try long slices (like eggplant) with the holder, but I assume you would need to get a steel glove to do that. I used both the julienne and the French fry blades, and they both work, although, if you are using the holder, you get fairly short French fries. I don't usually have a need to julienne anything, but that worked perfectly. The "wavy" cut worked perfectly. The only thing that didn't work at all was the waffle fry cut. Out of a whole potato, I got maybe 4 decent waffle fries--but I never planned to use it for that at all, anyway. I love how easy it is to store. I love that the julienne/french fry blades are integrated, and pop up or hide when you need them. I love that the one removable blade is so easy to insert, remove, change from wavy to straight, and and clean without risking your fingers. I also love that you can dial thicknesses of your slices, and that the steel board the food slides across does not "bow" like my previous plastic mandoline, so it's a precise cut. I would have given this item 5 stars, if it hadn't claimed to do waffle fries.

    Great product, purchased based off of America’s Test Kitchen review of the product. Easy to use, the finger guard is sturdy and I feel safe using. The blade is sharp and cuts potato’s, onions and cucumbers well. I haven’t used the other cutting options or foods yet but it’s much quicker and uniform cutting when using. I’ve been hand washing and with the dial closed, it keeps the blade from cutting you while cleaning.

    Only mandoline I have ever used, but like the sturdy base, adjustable width of slices, uniform sizes, and ease of cleaning. What I have learned so far is, slicing is done in record time, and I am at the end of the vegetable or fruit before I realize it. VERY important to use the guard that comes with it, and also purchase some knife-resistant gloves. NOT for children! Makes quick work of slicing, julienne, shredding, and other cuts, but one needs to pay attention or else you will cut yourself on any mandoline. Restaurants use them all the time. I tried to add a photo, but did not succeed, but it is beautiful when every piece is the exact same thickness and length. Pay attention and be creative! Glad I purchased it.

    I love the features, the easily customizable slicing, for thickness, julienne, etc.; it's easily cleanable, safe, foldable for storage - I love everything about it, except the blade! I found it hard to push the food through to slice almost from the day I got it. And it has only gotten worse. I'm going to try to talk to OXO about it and maybe get a new blade to compare.

    I bought this on the recommendation of Cooks Illustrated, and to be honest, it's the worst mandoline I've ever used. I had major issues with both the blade and the hand guard.

    First off, the blade: it is not sharp. And when I say "not sharp" I mean "unable to cut anything." You have to forcefully slam any hard vegetables (carrots, potatoes) down into the blade just to get them through, and the slices end up jagged and uneven. You have to use so much force, my forearm was sore after attempting to make French fries. Anything softer than a potato is just turned to mush: cucumbers and firm tomatoes are turned to liquified puddles instead of clean slices.

    At first I thought it was user error and I was just getting used to the mechanics of a new tool. After hacking several pounds of potatoes to bits, I checked the blade on a piece of paper, and then my skin. It was only then I realized it was blunt. Completely dull, and unable to slice anything. It's like I a received a unit with a defective, entirely unsharpened blade.... and because of the single angle edge, I was unable to sharpen myself.

    Separately, the hand guard is really awful. The "spring" mechanism is so strong, I was unable to get any veggies to stay IN the hand guard for slicing. Zucchini, carrots, potatoes... they will all shoot out of the hand guard and across the room after loading, and you have to press down forcefully while slicing to make sure the guard doesn't come off of the vegetables. Completely useless, and a design that doesn't actually seem to solve any issues.

    I will say that Oxo make generally great products... I have tons that I love and use regularly. I also know that they probably would have tried to fix the issue, but the quality of the blade and design of the hand guard seemed so misguided that it was a moot point.

    I ended up returning this item and got a refund.

    Excellent tool for preparing fruit for the dehydrator. Razor sharp with clean cut. The cut can be varied to right size. I wanted to salvage a crop of persimmons as one just can't eat them all at once!

    This slicer gave perfect cuts and now enjoying the dried and frozen fruit.

    I bought a cheaper one that didn’t feel very sturdy. Sent it back to Amazon. This product is excellent. Did very thin sliced onions for smash burgers and did 1/4 inch carrots for soup. Breezed right through it. Blade tucks under for safe cleaning. Highly recommend this product.

    The whole point of this tool is to be able to provide consistent precise cuts. This requires a very sharp blade. Despite a great design this mandolin is a fail as the blade is extremely dull. I was able to slice through tough vegetables like potatoes but with more effort than it would have taken with a knife. However, slicing softer vegetables was a complete no go. Firm tomatoes just resulted in mush due to a very dull blade. For a mandolin to do it’s job the blade has to be as sharp as your best chef’s knife. In this regard this product did not meet my expectations. I will attempt to sharpen the blade on my own to see if the performance can be improved but out of the box this should not be needed. Given the quality of the blade I’m not sure if any sharpening effort will give it the edge it should have.

    UPDATE. I was able to sharpen the flat edge of the blade to something acceptable but just barely. I don't know what metal the blade is made of but I suspect it will not hold an edge given how poor it performs. The blade will require very frequent sharpening to achieve consistent results. There is no way to sharpen the ruffle cut side of the blade and it is not at all sharp out of the box so I do not expect to use it at all.

    This was purchased with canning season in mind. It has proven to be so much more as we use it 3 or 4 times a week for everything from salads to french fries. Variety of thicknesses is amazing when slicing and it has sliced cucumbers to tomatoes perfectly.

    French fry size is perfect for oven fries. More of a shoe string size which we prefer. The mandolin is rock solid and easily cleaned with a long handled brush to stay clear of the blades.
