Forget it + Ferment It!
Here's the skinny: The small valve on the lid sits sealed against the lid surface. This prevents oxygen and bacteria from entering the jar. As carbon dioxide builds up as a result of the fermentation process, the valve flexes up and releases the pressure only as necessary.
Meanwhile the PickleHelix constantly pushes down on your veggies with 3 times the force of the heaviest glass weights to keep them below the brine no matter what. I also was concerned that they would rust after a few uses. These won't as they are stainless steel.
It would leak if turned over as the gas vents would leak, but I don't know of much that wouldn't leak and besides, you don't want to turn your fermentation over anyway.
They will only work on Wide mouth jars, so make sure you have the correct jars.
I am a former user of Pickle Pebbles and Pickle Pipes by Masontops. They served me well for a couple of years and then I discovered that the glass weights had cracked and actually chipped while being stored in a drawer, in the rubber secured box that they had come in! I contacted both Masontops and the seller on Amazon, Kitchen Essentials, and received absolutely NO REPLY from either of them, though it is clear that the composition of the glass in the Pickle Pebbles is now described as "soda lime", not lead free, as mine were. They have lost a customer!
The Trellis & Company Stainless Steel kit makes a lot more sense to me now! And they're not going to leave chips of glass in my ferment, or rust from use. I love the way the spring really does continue to apply pressure to the ferment: both my sauerkraut and kimchi look perfect! I plan to buy another set, AND EXTRA VALVES, simply because the valves are definitely the weakest link in the set! But, OH how clever this system is! Wish I'd thought of it!

You also have to be extra careful cleaning them or you'll break the silicone thing trying to put it back in the lid.
