The idea of a ceramic knife might seem a bit odd to you if you’re not familiar with them, but the fact is that ceramic knives offer a few advantages over more traditional steel culinary knives. Not only is a ceramic knife lighter than a traditional steel one, but because ceramic is harder than steel it is much better at holding an edge and thus retaining its sharpness even with regular use. If you want a good set of knives that you don’t have to worry about sharpening every so often, ceramic provides the perfect material for you. Another advantage on top of all of this is that ceramic knives are easier to clean and do not rust like high end carbon steel culinary knives can.
Generally ceramic knives are quite a bit harder than steel, almost as hard as diamonds. This helps them to retain an edge for far longer, because ceramic edges don’t bend (if ever so slightly) like steel ones do with regular use. While steel knives generally have a hardness of 4.5 on the Mohs scale of mineral hardness, whilst ceramic ones general have a hardness of around 8.5 - harder than even hardened steel which comes in at around 7.5 on average. Keep in mind, however, that hardness does not necessarily dictate whether or not a knife will break under strenuous or unusual circumstances. If you don’t really bother with honing your knives or don’t actually know how to sharpen using a whetstone then a set of fine quality ceramic knives would be a welcome and practical addition to your kitchen.
It’s true that you might hear the word “ceramic” and immediately wonder if a ceramic knife wouldn’t be quite fragile since ceramic dishes and whatnot tend to shatter if you drop them. You’ll have to be a bit careful with your knife, but the tradeoff is that there’s nothing sharper than a ceramic knife for cutting vegetables or boneless pieces of meat - just don’t try to hack through frozen bones or the like and it’ll be fine. It’s not like you don’t have to worry about steel knives getting banged up anyway - if you’re in the habit of storing your knives separately so that they don’t get banged around, ceramic knives aren’t much different to care for. If your ceramic knife set comes with sheathes to keep them in, you should utilise these so as to protect them from getting banged around as well as to prevent cutting yourself if you just kind of throw all of your knives into a utensil drawer.
Ceramic knives are generally made from zirconium dioxide, which is quite a bit harder and stronger than your average coffee mug. These knives are generally made by dry pressing zirconia powder and then firing it using solid state sintering in order to create a knife blade. Some blades go through an additional hot isostatic pressing step to make them even harder, and these knife blades are generally black-coloured. While the inherent hardness of ceramic makes it both durable and simple to maintain, it is true that it’ll most likely be too hard for you to successfully sharpen a set of ceramic knives at home. Eventually, all knives will end up losing their sharpness - and for ceramic knives this means that you will require specialised sharpening services for the blade.
Finding the right ceramic knife for your needs might be a bit difficult if you don’t know what you’re looking for, and there are several different styles of knives available. As is the usual case with culinary knives, ceramic knives are often available in sets rather than as individual pieces. These often come in sets of three or five, and ultimately it’s difficult to say what the best set for you would be as this depends a lot on your personal preferences as different sets will contain different styles of knives. There are a lot of good general purpose ceramic knife sets out there, but you also get ones for things like sushi - which basically use ceramic knives to the best of their advantages - slicing through vegetables and boneless meats. You won’t really find many ceramic meat cleavers out there for a good reason, but for any applications where you’re neither chopping through bone or frozen meat a ceramic knife will generally perform better than most steel culinary knives would. And of course they aren’t susceptible to things like corrosion - you can slice through all of the limes and tomatoes that you’d ever want to without having to worry about the blade getting corroded, which is arguable one of the major drawbacks of materials like carbon steel.
Of course if you don’t have a good set of knives in your kitchen already, you should get the appropriate tools for all of your culinary needs. A set of ceramic knives will suit you perfectly, because ceramic will serve all of the same needs as metal knives, without rusting or corroding like carbon steel and without getting dull like stainless steel tends to do in a relatively short period of time. Instead, you'll end up with a great set of knives that can last you a lifetime - and ceramic knives are also really easy to clean after use because you can simply wipe them off. While there are a few tradeoffs, generally ceramic knives can be vastly superior to steel ones for many kitchen uses.
